| Obtaining accurate measurements of carcass weight and lean yield after slaughter is important in pork production systems worldwide. These measurements provide essential information for evaluating carcass quality and commercial value and can also serve as objective criteria for carcass pricing. However, the authors noted that modern genetic improvement, changes in production and management practices, and increasing carcass weights have resulted in substantial differences between current pork carcasses and those used to develop previous prediction equations. Therefore, lean yield prediction equations should be periodically reevaluated and recalibrated to maintain their accuracy. In this study, the authors compared the ability of the AutoFom III automated ultrasound system, the Destron PG-100 optical grading probe, and manual cut-out to evaluate pork carcass traits and lean yield, and investigated whether AutoFom III could improve the accuracy of lean yield prediction. The results showed that AutoFom III and Destron PG-100 produced similar measurements of backfat thickness and muscle depth. However, both instruments predicted higher lean yield values than the carcass fat-free lean yield determined by manual cut-out, with Destron PG-100 showing a greater degree of overestimation. Because carcass payment systems may reward producers based on lean yield, such prediction bias could influence carcass pricing and producer payments. The authors further evaluated the ability of AutoFom III to predict the characteristics of individual primal cuts. AutoFom III showed moderate accuracy in predicting lean yield for the ham, picnic, and belly, and a higher degree of accuracy for the whole shoulder, butt, and loin. Information on primal weights and lean yields could assist packing plants in primal sorting and processing optimization and allow more accurate evaluation of carcass differences associated with suppliers, genetics, and management strategies. Therefore, packing plants should consider both the cost of implementing new grading technologies and the economic value of the additional information they provide. Overall, AutoFom III improved the prediction of carcass lean yield compared with Destron PG-100 and provided additional information on primal cuts, demonstrating its potential to improve carcass classification, primal sorting decisions, and transparency in producer payment systems.
